After you purchase a side of beef, you will be contacted by one of our Butchers to discuss all your custom cutting options. We will need 2 weeks lead time to have your Beef prepared.
The hanging weight is the weight of a side of beef after the head, feet, and organs have been removed.
A side will yield roughly ~245lbs of meat and will last in a deep freezer for a year or more. Once you select your custom cuts the amount butchered is usually around 60-70% of the hanging weight. Some weight will be lost to moisture during the aging process, and to bone and trim removed during the cutting process.
