Berryman's BEST Roast Chicken

We have tried out a few fantastic roast chicken recipes and this one quickly became our family's go to! It is an adaptation of a Gordon Ramsey recipe - and we think your family will enjoy it just as much as we do. We always get rave reviews from everyone at our table - let us know how it goes at yours! 

Berryman's BEST Roast Chicken

Ingredients

  • 1 Berryman Brothers Roasting Chicken
  • 1/2 -3/4 Cup Butter
  • 1 Tbsp Dried Thyme
  • 1 Tbsp Dried Sage
  • 4-6 Cloves Garlic (Minced)
  • Salt
  • Pepper

Instructions

  • Place in roasting tray / dish
  • Take a spoon (use either end) to get underneath skin and loosen all the way around the chicken
  • Melt butter and add minced garlic, herbs, and salt and pepper
  • Spoon melted garlic butter mixture under the skin of chicken and massage until chicken coated. Slather remaining butter mixture over outside of chicken
  • Add any fresh herbs of your choosing to the cavity of the chicken (sometimes we add rosemary and lemon)
  • Place the chicken BREAST down and cook at 425 (°F) for 30 mins
  • Turn chicken over and cook at 325 (°F) until internal is 165 (°F) basting occasionally
  • Broil for a few minutes to brown to your liking (optional)
  • Rest covered for 15-30min and serve

Chicken recipe sounds delish!!! Love your idea of roasting breast side DOWN first, then flipping over. Also, a very quick broil at the end is a SUPER idea. Thanks.

I recently purchased your chickens as part of the butchers box. They are SO juicy, but I thought I’d share a trick I just learned. Place the chicken on it’s side. 20 minutes in a 425 oven, then turn to the other side for another 20 minutes, then onto it’s back for 10 – 20 minutes. Golden, juicy and yummy. Next roast chicken I make will use your recipe, but cooking on it’s side. Thanks for sharing.
