Local Pan-Seared Oven-Roasted Bone-in Chicken Breast

2 large bone-in skin-on chicken breasts
3 large garlic cloves minced
3 Tbsp olive oil
2 Tbsp unsalted butter
2 tsp sea or kosher salt
1 Squeeze of lemon
Fresh cracked black pepper - to taste


Preheat the oven to 410F.

* Opional - Break bones in center to ensure even browning on each side. Use a meat tenderizer or put one in a freezer bag and hit it against the counter top.

Rub garlic, 1 Tbsp olive oil and salt into surface of breasts

Heat the butter and remaining oil in a pan at medium-high heat.

If you broke the bones sear chicken on both sides for 2 minutes. If not sear the skin side only.

Now put the chicken into a roasting dish and bake for 18 - 20 mins.

Check with a meat thermometer - ideal temp is about 70 degrees celsius. Or slice them open to confirm the inside is white and fluffy - not pink or slimy.

Remove them from the oven and place on plates. Let them stand and cool for 5 minutes

Crack pepper and squeeze fresh lemon juice. Yum!
