Chipotle Instant Pot Pulled Pork

Is your Instant Pot still sitting on your shelf? Scared of all the buttons? Fear not, this pulled pork recipe is a family favorite and is the perfect easy meal for quick dinners, events, and even to put away in the freezer for those days you just don't want to cook at all (cough, cough...me everyday). 

So pull out your Instant Pot and lets pull some pork!

Ingredients.....now I have a little to say about this. I am not a fan of hot spicy anything. When I go to the Noodle Box I am a zero flames girl. I will add in an alternative spice for those of you whose palate may enjoy a little more kick than I do.

Ingredients 

1 Tbsp Packed Brown Sugar

2 Tsp Paprika

2 Tsp Garlic Powder

2 Tsp Onion Powder

1 Tsp Salt

1 Tsp Pepper

1 Tsp Chipotle Chili Pepper  (sub in 1/4-1/2 Tsp Cayenne for more kick)

3 Lbs Pork Shoulder Roast (bone in or out) - Cut into small cubes

2 Tbsp Olive Oil

1/3 Cup Apple Cider Vinegar 

2 Cups BBQ Sauce Divided 

1 1/4 Cups Broth (chicken or beef)

1 Tsp Hot Sauce (optional)

Instructions

1. Mix together all dry ingredients in a small bowl - Brown sugar, paprika, garlic powder, onion powder, salt, pepper, cumin, chipotle, and cayenne. Cubed Pork.

2. In a large bowl, season the cubed pork with your amazing aromatic hand crafted seasoning you just made!

3.In another medium sized bowl mix together all of your wet ingredients. apple cider vinegar, 1 CUP of the BBQ sauce, 1 cup of broth, and hot sauce...if using.

4. Press the Saute function on your Instant Pot. Make sure your stainless steel insert in in place. I also place a wood cutting board underneath my Instant Pot to protect my counter tops from the heat. Now add the olive oil.

5. Add about half of the seasoned pork to the Instant Pot and saute for about 3-5 minutes a side. Remove sauteed pork to a plate, and saute the other half of the pork until browned. 

6. Turn off your Instant Pot, and take the remaining 1/4 cup of broth and deglaze the pot. (Some people opt to use Whisky or Bourbon for this)

7. Add all of the meat and the wet BBQ sauce mixture into the Instant Pot.

8. Close the lid and set to sealing

9. Cook on Manual high pressure for 40 mins, then allow to naturally release for 10 mins. After 10 mins you can use quick release to decrease pressure.

10. Remove all your meat from the Instant pot, a strainer is great for making sure you have retrieved all of your meat bits.

11. Shred meat with a fork or in a standard mixed and stir in the remaining BBQ sauce. Serve on buns with coleslaw if desired!

 

That is it! If you have a large family (like us) or you are having a large gathering you can leave the pulled pork in the Instant Pot using the warm function to ensure everyone's second helping is as moist as the first!!!
